250 grams cod loin (you can use dory or grouper), cut into 1/2 inch thick
Few slices of ginger, cut into matchsticks
Toasted sesame oil
1. Combine ingredients on a plate/bowl. Spread ginger on top.
2. Drizzle sesame oil then steam for about 8-10 minutes over medium heat.
3. Set aside then prepare soy sauce.
Soy sauce base:
1/4 cup soy sauce, light soy sauce preferrable but you can use Datu Puti
1/3 cup water
2 tbsps brown sugar
1. In a saucepan, combine all the ingredients. Simmer until sugar has incorporated fully with the soy sauce. Set aside.
Then, in the same plate/bowl where you steamed the fish, pour over the soy mixture then steam again for another 5-6 minutes. Turn heat off then add garlic bits on top, garnish with onion leeks
