Filipino beef mechado
500g beef brisket
3 cloves garlic
1 medium onion
1 1/2 cups water
1/2 cup tomato sauce
4 tbsps soy sauce
3 pcs bay leaves
3 tbsps lemon juice
4 small potatoes, cut into half an inch thick
1 carrot, peeled and cut into half an inch thick
Salt and pepper to taste
1. Sauté garlic and onion until soft and fragrant, add beef and stir until both sides are brown.
2. Add water, soy sauce, bay leaves and tomato sauce then simmer until beef is tender and sauce is reduced.
3. When beef is tender, add potatoes and carrots then continue cooking until vegetables are tender.
4. Season with salt and pepper. Serve with hot white rice.
