Roast Ribeye Butter Steak ala Maine

This recipe is inspired from Tastemade’s Prime Rib with Garlic Herb Butter. I did some few tweeks here and there since i’m not a fan of rare or medium rare steaks and of course, for some additional flavors.


1 cup salted butter, softened

6 cloves of garlic, minced

1 tbsp of thyme

1 tsp of salt

1 tsp of pepper

1k of ribeye roast

For the gravy:

2 cups beef stock

2 tbsp of flour 

Beef drippings

1 stick butter

Truffle oil


  1. Preheat the oven to 500Β°F/260Β°C.
  2. Mix butter, thyme, garlic, salt and pepper.
  3. Rub salt and pepper to the butter. Rub with garlic powder but this is optional, I did it just to incorporate more garlic flavors to the roast beef.
  4. Then rub and cover the beef with the butter mixture. Make sure to cover everything.
  5. Bake for 5 mins per pound of meat. I baked mine for 20 mins.
  6. Turn off oven. Then heat a pan with olive oil and sear the sides of the beef roast.
  7. Place it back inside the oven and let it sit for 2 hours. Do not open the oven door.

Roast beef with the butter mixture. I make sure the beef was dry before covering it with butter.

All covered up!

For the gravy:

  1. Get the drippings from the pan to a saucepan. Medium heat
  2. Add flour, stirring until there are no lumps. Bring to a boil.
  3. Add beef stock and butter
  4. Add more thyme for flavor and truffle oil.

Serve it with mashed potatoes or beans. But we will have it with rice (we’re definitely weirdos!) 🍚🍴
